Module 1 Discussion:

Growing up in a large multi generational italian household there were many nutritional concepts that were ingrained in me from birth.  Seeing as how my grandparents owned and operated an Italian meat market for 60 years, the idea of eating vegetarian never existed.  In fact, it was nearly sacrilegious!! Into adulthood, I discovered that eating a primarily plant based diet significantly increased my energy and was much easier for me to digest.  The idea that I could eat a vegetarian diet and get all of the necessary nutrients to be healthy took nearly 30 years for me to develop and integrate into my life.  Breaking old cultural habits can be difficult and is often times raut with failure.
